Sports cards covers everything from a 1950s baseball common to a numbered rookie patch autograph pulled last week. In practice a shop that says it does sports cards falls somewhere on a spectrum: some are essentially modern sealed retailers, some are singles houses with deep boxes to dig through, and some are vintage specialists who barely touch current product. Which one you want depends entirely on what you collect.

Cards in the case should have prices on them, and those prices should differ between grades and parallels of the same card. A case where everything is 'ask' is a case that gets priced based on how you look.
A shop with three boxes of 1970s baseball and no modern is more useful to a vintage collector than one with a single row of each decade. Ask what they are strongest in — good shops answer immediately.

Slabs stored upright and priced against recent sales for the same card, grade, and grading company. A shop pricing a PSA 9 and a PSA 10 the same is not following the market.
Penny sleeves, top loaders, one-touches, and semi-rigid holders. It sounds trivial; a shop that runs out of top loaders is a shop that is not really serving collectors.
Tags come from the shop's own site or an owner claim, never from a competitor's classification.
